Whipped Bleu Brie with Pass De Scotchie Almonds

An easy and delicious appetizer for any gathering, using my Pass de Scotchie pepper jelly
Ingredients
Whipped Brie

8 oz bleu brie (or regular brie), rind removed
- 2–3 tbsp lightly whipped heavy cream
-
pinch of salt (optional)
Candied Almond Topping
-
¼ cup chopped almonds
- 1 tbsp butter
-
3 tbsp Pass De Scotchie passionfruit pepper jelly (saucier!)

tiny pinch of salt (optional)
To Serve
-
Baguette slices or gluten-free crackers
Directions
Whip the Brie
Remove the rind from the Brie and cube it.
- Add to a stand mixer fitted with the paddle attachment.
Whip on medium–high until smooth and creamy — it will look lumpy at first, but keep going.
Add the lightly whipped cream and keep mixing until it’s pale, silky, and mousse-like.
Make the Almond Topping
Melt the butter in a small sauté pan over medium heat.
- Add the chopped almonds and toast 1–2 minutes until fragrant and lightly golden.
Stir in 3 tbsp Pass De Scotchie and cook 30 seconds until glossy and saucy.
Plate
Spoon the whipped Brie onto a plate and smear it into a swoosh.
- Pour the warm, saucy almond mixture right over the top.
Serve immediately with baguette or gluten-free crackers.
Recipe Note
Chef’s Notes
• Extra jelly makes the topping glossy, sticky, and perfect for dragging bread through.
• Add thyme, rosemary, or pomegranate for a holiday moment.
• The Brie must be warm-ish for the fluffiest whip — room temp is best.
