
Shrimp Summer Rolls with Sesame Please Dipping Sauce

These fresh, light summer rolls are full of crunch, color, and clean flavour—perfect for a low-calorie lunch or snack. Swap the shrimp for tofu, chicken, or whatever you have on hand!
Ingredients

4 vietnamese rice paper wrappers (summer roll/spring roll wrappers)

4 romaine lettuce leaves

1 small avocado, sliced

1 small cucumber, julienned
-
½ cup bean sprouts
-
½ cup julienned carrots
-
8 medium shrimp, peeled and deveined

1 jalapeño, thinly sliced (optional)

¼ cup TOOKSIE’S Sesame Please dressing (for dipping)

1 tsp sesame seeds (for garnish)

Salt (for blanching water)
Directions
Blanch the Shrimp
Bring a small pot of salted water to a boil
Add shrimp and cook for 1–2 minutes, just until they turn pink and opaque
Drain and set aside to cool. Slice in half lengthwise
Prep the Wrapper
Fill a shallow dish with warm water
Dip each rice paper wrapper in the water for 1 second (no more!), then place on a cutting board or clean surface
Assemble the Rolls
Place 1 romaine leaf on the lower third of the wrapper
Layer with 2–3 slices of avocado, a few sticks of cucumber, a small handful of bean sprouts, and some julienned carrots
Roll the wrapper up halfway
Add 4 shrimp halves and a few jalapeño slices just above the rolled section
Tuck in the sides, then finish rolling like a burrito
Plate & Serve
Place rolls on a serving plate. Pour Sesame Please into a small dipping bowl and sprinkle with sesame seeds
Serve immediately with dipping sauce on the side
